Sablefish Recipe

Ingredients:

  • 4 sablefish fillets (about 6 ounces each)
  • 1/4 cup white miso paste
  • 1/4 cup sake (Japanese rice wine)
  • 1/4 cup mirin (sweet rice wine)
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • Toasted sesame seeds (for garnish, optional)
  • Sliced green onions (for garnish, optional)

Instructions:

  1. Prepare the Marinade:
    • In a small saucepan, combine the white miso paste, sake, mirin, sugar, soy sauce, sesame oil, grated ginger, and minced garlic.
    • Heat the mixture over low heat, stirring constantly, until the sugar has dissolved and the ingredients are well combined. This should take about 5 minutes. Remove from heat and let it cool to room temperature.
  2. Marinate the Sablefish:
    • Place the sablefish fillets in a shallow dish or a resealable plastic bag.
    • Pour the cooled miso marinade over the fish, making sure to coat each fillet evenly.
    • Seal the dish or bag and refrigerate it for at least 2 hours, or ideally overnight. Marinating overnight will allow the flavors to penetrate the fish more deeply.
  3. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  4. Cook the Sablefish:
    • Remove the marinated sablefish from the refrigerator and let it come to room temperature for about 15-20 minutes.
    • Place the fillets on a baking sheet lined with parchment paper or lightly greased.
    • Bake in the preheated oven for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The cooking time may vary depending on the thickness of the fillets.
  5. Broil for a Glaze:
    • If desired, you can switch your oven to the broil setting for the last 2-3 minutes of cooking to caramelize the top and give it a beautiful glaze. Be sure to keep a close eye on it to prevent burning.
  6. Garnish and Serve:
    • Once the sablefish is done cooking, remove it from the oven.
    • Garnish with toasted sesame seeds and sliced green onions, if desired.
    • Serve the miso glazed sablefish hot with your choice of side dishes, such as steamed rice and sautéed vegetables.
