Miso-Glazed Black Cod

Miso-Glazed Black Cod is a flavorful and tender dish that highlights the natural sweetness and richness of black cod. Here's a simple recipe to make Miso-Glazed Black Cod at home:


  • 4 black cod fillets (about 6 ounces each)
  • 1/4 cup white miso paste
  • 2 tablespoons mirin (Japanese sweet rice wine)
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • Sesame seeds and sliced green onions, for garnish (optional)


  1. In a small bowl, whisk together the white miso paste, mirin, soy sauce, brown sugar, and minced ginger until well combined. This will be your miso glaze.
  2. Place the black cod fillets in a shallow dish or resealable plastic bag. Pour the miso glaze over the fillets, making sure they are evenly coated. Marinate the fish in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  4. Remove the black cod fillets from the marinade and place them on the prepared baking sheet. Reserve any excess marinade for basting.
  5. Bake the black cod fillets in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork. While baking, baste the fillets with the reserved miso glaze every few minutes to add extra flavor and moisture.
  6. Once cooked, remove the black cod fillets from the oven and transfer them to serving plates. Garnish with sesame seeds and sliced green onions, if desired.
