Elk Chili

Elk chili is a hearty and flavorful dish that showcases the rich taste of elk meat. Here's a simple and delicious elk chili recipe for you to try:

Ingredients:
  • 1 lb ground elk meat
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef or elk broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro
Instructions:
  1. Brown Elk Meat:
    • In a large pot or Dutch oven, heat a bit of olive oil over medium heat. Add the ground elk meat and cook until browned, breaking it apart with a spoon as it cooks.
  2. Saute Aromatics:
    • Add chopped onions and minced garlic to the pot. Saute until the onions are softened.
  3. Add Vegetables:
    • Stir in diced bell pepper and cook for a few minutes until it starts to soften.
  4. Combine Beans and Tomatoes:
    • Add kidney beans, black beans, diced tomatoes, and tomato paste to the pot. Mix well.
