Grilled Lemon-Rosemary Rabbit Skewers:Ingredients:

  • 2 lbs rabbit meat, cut into cubes
  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water
Instructions:
  1. Prepare the Marinade:
    • In a bowl, combine olive oil, lemon zest, lemon juice, chopped rosemary, minced garlic, salt, and pepper. Whisk the ingredients together until well combined.
  2. Marinate the Rabbit:
    • Place the rabbit cubes in a large, shallow dish or a resealable plastic bag.
    • Pour the marinade over the rabbit, ensuring that each piece is well-coated. Massage the marinade into the meat.
    • Cover the dish or seal the bag and refrigerate for at least 30 minutes to allow the flavors to infuse.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat. If you're using wooden skewers, make sure to soak them in water for about 30 minutes to prevent burning.
  4. Skewer the Rabbit:
    • Thread the marinated rabbit cubes onto the soaked skewers, leaving a small space between each piece for even cooking.
  5. Grill the Skewers:
    • Place the rabbit skewers on the preheated grill.
    • Grill for about 10-15 minutes, turning the skewers occasionally to ensure even cooking. Baste the rabbit with any leftover marinade during grilling.
  6. Check for Doneness:
    • The rabbit is done when it reaches an internal temperature of 160°F (71°C) and is no longer pink in the center.
  7. Serve:
    • Remove the skewers from the grill and let them rest for a few minutes.
    • Serve the grilled rabbit skewers with your favorite side dishes or a simple green salad.
  8. Garnish (Optional):
    • Garnish with additional fresh rosemary and a wedge of lemon for a burst of flavor.
