Fish Curry

Fish curry is a delicious and comforting dish that's popular in many cuisines around the world, including Indian, Thai, and Caribbean. Here's a basic recipe for a flavorful fish curry:

Ingredients:

  • 1 lb (450g) firm white fish fillets, such as cod, halibut, or tilapia, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (14 oz/400ml) coconut milk
  • 1 can (14 oz/400g) diced tomatoes
  • 1 cup (240ml) fish stock or water
  • Salt and pepper to taste
  • Fresh cilantro leaves, chopped, for garnish
  • Cooked rice or naan bread, for serving

Instructions:

  1. Heat the vegetable oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
  3. Stir in the curry powder, ground turmeric, ground cumin, ground coriander, and chili powder. Cook the spices for a minute or until they become fragrant.
  4. Pour in the coconut milk, diced tomatoes (with their juices), and fish stock (or water). Stir well to combine and bring the mixture to a simmer.
  5. Add the fish chunks to the skillet and gently stir to coat them with the sauce. Simmer gently for about 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Taste the curry and adjust the seasoning with salt and pepper as needed.
  7. Serve the fish curry hot, garnished with chopped cilantro leaves. Enjoy with cooked rice or naan bread.
