Venison with Cranberry Sauce

Venison chops in cranberry sauce is a delightful dish that combines the rich, earthy flavors of venison with the tangy sweetness of cranberries. It's a perfect example of how hunting and cooking your own game can result in a unique and delicious meal.

 Ingredients:

  • 4 venison chops
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon butter

Instructions:

  1. Prepare the Cranberry Sauce:
    • In a saucepan, combine the cranberries, orange juice, maple syrup, and balsamic vinegar.
    • Cook over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens, about 10-15 minutes.
    • Stir in the fresh rosemary and season with salt and pepper to taste. Remove from heat and set aside.
  2. Cook the Venison Chops:
    • Season the venison chops with salt and pepper on both sides.
    • In a skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
    • Add the venison chops to the skillet and sear for about 2-3 minutes on each side for medium-rare, adjusting the cooking time to your desired level of doneness.
    • Remove the chops from the skillet and let them rest for a few minutes.
  3. Finish the Dish:
    • In the same skillet, add the butter and let it melt. Pour in the cranberry sauce and stir to combine with the pan drippings.
    • Return the venison chops to the skillet and spoon the cranberry sauce over them.
    • Cook for an additional 2-3 minutes, allowing the chops to absorb the flavors of the sauce.
  4. Serve:
    • Plate the venison chops and drizzle them generously with the cranberry sauce.
    • Garnish with a sprig of fresh rosemary or some orange zest for extra flavor and presentation.

This recipe not only showcases the deliciousness of venison but also highlights the benefits of using fresh, seasonal ingredients like cranberries and rosemary. It's a testament to how hunting and cooking your own food can result in a unique and mouthwatering dining experience that you can share with others to promote the joys of hunting and foraging. Enjoy your meal, and happy hunting!
