Halibut Recipe

Pan-Seared Halibut with Lemon Butter Sauce

Ingredients:

  • 2 halibut fillets (6-8 ounces each)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Pat the halibut fillets dry with paper towels and season both sides with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Place the halibut fillets in the skillet, skin side down if the skin is still on, and cook for about 4-5 minutes until the bottom side is golden brown and crispy. Flip the fillets and cook for another 3-4 minutes until cooked through. The flesh should be opaque and easily flake with a fork.
  4. Remove the halibut fillets from the skillet and transfer them to a serving platter. Tent with foil to keep warm.
  5. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  6. Stir in the lemon juice and lemon zest, scraping any browned bits from the bottom of the skillet. Cook for another minute until the sauce is heated through.
  7. Pour the lemon butter sauce over the halibut fillets. Sprinkle with chopped fresh parsley for added freshness and color.
  8. Serve the pan-seared halibut immediately while it's still hot. You can pair it with your favorite side dishes such as roasted vegetables, steamed rice, or a crisp salad.
