Catfish Po' Boy Sandwich

Instructions:1. Catfish Preparation:

  1. In a bowl, soak catfish fillets in buttermilk for at least 30 minutes to an hour.
  2. In a separate bowl, mix cornmeal or flour with Cajun seasoning, salt, and pepper.
  3. Heat vegetable oil in a skillet or deep fryer to 350°F (175°C).
  4. Dredge catfish fillets in the seasoned flour mixture, ensuring they are well-coated.
  5. Fry catfish fillets until golden brown and cooked through, usually 3-4 minutes per side.
  6. Remove from oil and drain on paper towels.

2. Creole Mayo:

  1. In a small bowl, combine mayonnaise, hot sauce, Cajun seasoning, and minced garlic.
  2. Mix well until all ingredients are thoroughly combined.
  3. Adjust the spice level to your preference by adding more or less hot sauce.

3. Assembling the Po' Boy:

  1. Slice the baguette or sub rolls horizontally.
  2. Spread a generous amount of Creole mayo on both sides of the bread.
  3. Place a layer of lettuce leaves on the bottom half of the bread.
  4. Add the fried catfish fillets on top of the lettuce.
  5. Arrange sliced tomatoes and pickles on the catfish.
  6. Place the top half of the bread over the fillings, creating a sandwich.

4. Serving:

  1. Slice the Po' Boy into individual portions.
  2. Serve immediately, and optionally, with additional Creole mayo on the side for dipping.
