Catfish Po' Boy Sandwich
Ingredients:For the Catfish:
- Catfish fillets
- 1 cup buttermilk
- 1 cup cornmeal or flour
- Cajun seasoning (to taste)
- Salt and pepper (to taste)
- Vegetable oil (for frying)
For the Creole Mayo:
- 1 cup mayonnaise
- 1 tablespoon hot sauce
- 1 teaspoon Cajun seasoning
- 1 clove garlic, minced
For the Sandwich:
- Baguette or sub rolls
- Lettuce leaves
- Sliced tomatoes
- Sliced pickles
Instructions:1. Catfish Preparation:
- In a bowl, soak catfish fillets in buttermilk for at least 30 minutes to an hour.
- In a separate bowl, mix cornmeal or flour with Cajun seasoning, salt, and pepper.
- Heat vegetable oil in a skillet or deep fryer to 350°F (175°C).
- Dredge catfish fillets in the seasoned flour mixture, ensuring they are well-coated.
- Fry catfish fillets until golden brown and cooked through, usually 3-4 minutes per side.
- Remove from oil and drain on paper towels.
2. Creole Mayo:
- In a small bowl, combine mayonnaise, hot sauce, Cajun seasoning, and minced garlic.
- Mix well until all ingredients are thoroughly combined.
- Adjust the spice level to your preference by adding more or less hot sauce.
3. Assembling the Po' Boy:
- Slice the baguette or sub rolls horizontally.
- Spread a generous amount of Creole mayo on both sides of the bread.
- Place a layer of lettuce leaves on the bottom half of the bread.
- Add the fried catfish fillets on top of the lettuce.
- Arrange sliced tomatoes and pickles on the catfish.
- Place the top half of the bread over the fillings, creating a sandwich.
4. Serving:
- Slice the Po' Boy into individual portions.
- Serve immediately, and optionally, with additional Creole mayo on the side for dipping.
