Ingredients:
  • Eggs: 4-6, depending on the number of servings needed.

  • Potatoes: 2-3 medium-sized, diced into small cubes.
  • Onions: 1 medium-sized, chopped.

Instructions:
  1. Prep the Campfire: Get your campfire going and stable enough to cook on. A grill grate over the fire is ideal for placing your skillet.
  2. Cook the Meat: Place the skillet over the campfire. Once hot, add the bacon or sausage. Cook until crispy or fully cooked, then remove and set aside. If using bacon, you might want to leave the bacon grease in the pan for extra flavor.
  3. Cook Potatoes: In the same skillet, add a bit more oil or butter if needed. Add the diced potatoes. Cook until they start to get soft and golden brown, stirring occasionally.
  4. Add Vegetables: Add the chopped onions and bell peppers (and any other vegetables you're using) to the skillet. Cook until they soften.
  5. Eggs and Cheese: Once the vegetables are cooked, make small wells in the skillet and crack the eggs into them. You can scramble them in a separate bowl beforehand or directly in the skillet. Alternatively, you can let the eggs cook sunny-side up.
  6. Add Cooked Meat: Chop the cooked bacon or sausage and add it back into the skillet.
