Campfire Breakfast Burritos
Campfire breakfast burritos are a delicious and satisfying camping meal to kickstart your day. Here's a simple recipe to make campfire breakfast burritos:
Ingredients:
- 4 large tortillas
- 8 large eggs
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced onions
- 1/2 cup diced cooked bacon or sausage (optional)
- 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- Salt and pepper to taste
- Salsa (optional, for serving)
- Cooking oil or butter for cooking
Equipment:
- Campfire or camp stove
- Skillet or frying pan
- Aluminum foil
Instructions:
- Prep Your Ingredients:
- Dice the bell peppers and onions.
- If you're using bacon or sausage, make sure it's cooked and crumbled.
- Crack the eggs into a bowl and whisk them. Season with salt and pepper.
- Cook the Filling:
- Heat a skillet or frying pan over your campfire or camp stove.
- Add a little cooking oil or butter to prevent sticking.
- Add the diced bell peppers and onions and cook until they soften, about 3-5 minutes.
- If you're using bacon or sausage, add it to the pan and cook for an additional 2-3 minutes until heated through.
- Pour the whisked eggs into the pan with the vegetables and meat. Stir occasionally until the eggs are scrambled and cooked to your desired doneness.
- Assemble the Burritos:
- Lay out your tortillas on a clean surface.
- Spoon the scrambled egg mixture onto each tortilla, leaving some space around the edges.
- Sprinkle shredded cheese over the eggs.
- Roll the Burritos:
- Fold in the sides of the tortilla to cover the filling.
- Then, fold the bottom edge of the tortilla up over the filling.
- Roll the burrito tightly from the bottom to the top, tucking in the sides as you go.
- Wrap in Foil:
- Place each burrito in a piece of aluminum foil.
- Roll them up tightly, folding in the sides, so they are completely covered.
- Warm by the Campfire:
- Place the foil-wrapped breakfast burritos on a grate over the campfire or directly on the campfire coals.
- Heat for about 5-10 minutes, turning occasionally, until the burritos are heated through, and the tortilla is slightly crispy.
- Serve:
- Carefully unwrap the foil from the burritos.
- Serve your campfire breakfast burritos with salsa, if desired.
Enjoy your hearty and delicious campfire breakfast burritos as a perfect start to your camping day!
