Campfire Breakfast Burritos

Campfire breakfast burritos are a delicious and satisfying camping meal to kickstart your day. Here's a simple recipe to make campfire breakfast burritos:

Ingredients:

  • 4 large tortillas
  • 8 large eggs
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/2 cup diced cooked bacon or sausage (optional)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • Salt and pepper to taste
  • Salsa (optional, for serving)
  • Cooking oil or butter for cooking

Equipment:

  • Campfire or camp stove
  • Skillet or frying pan
  • Aluminum foil

Instructions:

  1. Prep Your Ingredients:
    • Dice the bell peppers and onions.
    • If you're using bacon or sausage, make sure it's cooked and crumbled.
    • Crack the eggs into a bowl and whisk them. Season with salt and pepper.
  2. Cook the Filling:
    • Heat a skillet or frying pan over your campfire or camp stove.
    • Add a little cooking oil or butter to prevent sticking.
    • Add the diced bell peppers and onions and cook until they soften, about 3-5 minutes.
    • If you're using bacon or sausage, add it to the pan and cook for an additional 2-3 minutes until heated through.
    • Pour the whisked eggs into the pan with the vegetables and meat. Stir occasionally until the eggs are scrambled and cooked to your desired doneness.
  3. Assemble the Burritos:
    • Lay out your tortillas on a clean surface.
    • Spoon the scrambled egg mixture onto each tortilla, leaving some space around the edges.
    • Sprinkle shredded cheese over the eggs.
  4. Roll the Burritos:
    • Fold in the sides of the tortilla to cover the filling.
    • Then, fold the bottom edge of the tortilla up over the filling.
    • Roll the burrito tightly from the bottom to the top, tucking in the sides as you go.
  5. Wrap in Foil:
    • Place each burrito in a piece of aluminum foil.
    • Roll them up tightly, folding in the sides, so they are completely covered.
  6. Warm by the Campfire:
    • Place the foil-wrapped breakfast burritos on a grate over the campfire or directly on the campfire coals.
    • Heat for about 5-10 minutes, turning occasionally, until the burritos are heated through, and the tortilla is slightly crispy.
  7. Serve:
    • Carefully unwrap the foil from the burritos.
